Spiced Pumpkin Cookies with Brown Butter Glaze
First on the menu, those sexy squash. Sweet or savory squash is friendly with any flavor and we like to make the most of it while we can.
Earlier this week our kitchen prepared some amazing pumpkin mac ‘n cheese, taking the tried and true hibernation inducing blend of creamy cheeses, sauce, and dispossessed smiles(the mac’s) giving it that creamy kick only pumpkins can provide, as well as potassium and Vitamin A.
To keep you extra warm and ready for the day, Rebecca Jean Catering brings you plump pumpkin pancakes.
Here’s a tip!
When cooking at home, whole pumpkins planned primarily for pies is often much thinner when pureed than the stuff in a can. To get your pies the fluffiest, bake rather than steam or boil the pumpkin. To use for a pie, mash and drain your baked squash through cheesecloths, or blend.
